PROVINCE OF JUJUY

Bordering with Bolivia and Chile, this province's distinctive feature is the variations in heights, with a predominantly mountainous topography where the Quebrada de Humahuaca (declared Cultural Landscape by the UNESCO) constitutes the most popular tourist site. Prairies cover a third part of the territory, including the Puna Jujeña, 3,000 mt above sea level: with a dry and cold climate. In the southern area, rich with woods, we find the most important crops of the region: sugar cane, tobacco, maize and citric. Its wealth comes from the mining industry, oil extraction and steel production. Some of the country's most famous religious festivities take place here (the Pachamama or Mother Earth), by means of which ancient rites are kept alive. The carnival is also celebrated, with a great display of traditional local music. Its cuisine, just like in the rest of the North-east region, includes empanadas (meat pies), jams made from citric fruits and the local specialty: cheese and sugar cane.
