PROVINCE OF CATAMARCA

This province of arid grounds displays mountain ranges with many valleys linked by means of paths named "cuestas". It is dominated by the Cordillera de los Andes and connected with Chile through high paths.

Archeological remains of ancient aboriginal civilizations, such as the diaguitas and calchaquies, can be found here. The visitor may buy a variety of knitted products made of llama, vicuña, alpaca, sheep and guanaco.

Its wealth comes from the mining industry and the production of olives, nuts, figs, grapes, spices and citric.

Its cuisine makes good use of these products and creates dishes of Spanish and Arabian origin.

Its pastry includes cayote, fig and pumpkin jams.
